Abstract

The nutritional value of the protein in Lentinus edodes fruit bodies cultivated with different sawdust-saving substrates was studied. The results showed that the essential amino acid contents of L. edodes fruitbodies cultivated on sawdust-saving substrates and sawdust had no signifcant difference. The SRC in the former was higher than that of the latter. This suggested that L. edodes cultivated on sawdust-saving substrates was a kind of edible fungi with higher nutritional value.
