Abstract
The protein nutritional value of L. edodes fruit-bodies cultivated with two kinds of crop sawdust-saving substitutes and sawdust were studied with the international protein assessment method .The results showed that: NI (nutritional index) in Lentinula. edodes fruit-bodies cultivated with two kinds crop sawdust-saving substitutes lower than that of sawdust cultivation, whereas CS (chemical score), AAS (amino acid score), EAAI (essential amino acid index), BV (biological value), SRCAA (score of ratio coefficient of amino acid) were higher, the result suggested that the nutritional value of L. edodes fruit-bodies cultivated either by crop sawdust –saving substitutes or sawdust was higher and had no significant difference between them.
