Abstract
The protein nutritional value of L.edodesfruitbodies cultivated with two kinds of crop sawdust-saving substitutes(cotton stalk powder and corn stalk powder) and CK(sawdust) were studied with the international protein assessment method.The results showed that NI(nutritional index)in L.edodesfruitbodies cultivated with two kinds of crop sawdust-saving substitutes lower than CK,where as CS(chemical score),AAS(amino acid score),EAAI(essential amino acid index),BV(biological value),SRCAA(score of ratio coefficient of amino acid)were higher.The result suggested that the nutritional value of L.edodes fruitbodies cultivated eitherby crop sawdust –saving substitutes or sawdust was higher.
