Abstract
The result of measuring the nitrate content in vegetables of 11categories of 59 species showed that nitrate pollution of vegetables in Quanzhou city was serious.Nitrate content of different catagories was in the following order:leaf vegetablesroot vegetablestuber crops solanaceous fruitsbulb crops sprouting vegetables,gourd vegetableslegumesperenial vegetablesedible fungi.Fertilization and soil fertility significantly affected nitrate content of vegetables.
