Evaluation of Nitrate Pollution of Vegetables in Fengyan Market and Its Control

The nitrate content of vegetables was determined in Fengyang market. The resuhs showed the nitrate content of the root vegetables and the leaf ones exceeded seriously the standard of food safety, the pollution grades of all these vegetables were over 3. There was a definite law about the nitrate content among the different kinds of vegetable, the order from higher to lower was root vegetablesleaf vegetablesChinese yam vegetablesgourdsonions and garliceggplants. The reasons were analyzed if the nitrate content of vegetables exceeded the standard of food safety on the investigation, and the countermeasures to reduce the nitrate content of vegetables were put forward.
