Abstract
The process of AOT/isooctane reverse micelles system for the extraction of protein from sunflower seeds was studied.Protein was not extracted through controlling W_0,and under it only chlorogenic acid was extracted.After that,the effects of factors for protein extraction were investigated.The results of the orthogonal experiments showed that the optimum conditions of forward extraction was:the concentration of AOT 0.12g/mL,the ratio of sunflower meal to solvent 1∶25,the molar ratio of water to surfactant 18∶1,extraction temperature 40℃,extraction time 60min,pH of water 7.0,the concentration of KCl 0.05mol/L.
