Abstract
In this paper,factors which influenced the extraction of sun-flower protein from sunflower meal were discussed. In the present,the Anion AOT/ iso-octane system extract sunflower seed protein the extracting rate to be high. The optimum conditions,such as temperature (35 ℃-40 ℃),W0 (30-50),surfactant and its content were determined,in order to gain the peak yield of protein(88.9 %).
