Abstract

This study mainly focused on the effects of pretreatment temperature,pretreatment time,substrate concentration,enzyme quantity(U/g pattern),enzymatic time,enzymatic temperature on soybean protein isolated by 2709.Meanwhile,the optimal conditions of hydrolysis were determined by orthogonal design and analysis of variance.Results of enzymatic modification of SPI by alkaline proteinase indicated that the optimal pretreatment conditions were 70℃,10 min.Single factor experiments showed that the optimal modification conditions were 3% substrate concentration,4000U/g SPI under 50℃ for 4.5 h.Orthogonal design and analysis of avariance(ANOVA) were adopted,results indicated that those effects of added enzyme amount and temperature were notable(P0.05) but the influences of dealt time by alkaline and temperature were not notable(P0.05).
