Abstract

This experiment mainly studied the effects of pretreatment temperature, pretreatment time, substrate concentration, added enzyme quantity(U/g SPI),enzymatic time, enzymatic temperature on SPI’s hydrolysis by AS1.398.And meanwhile, the optimal conditions of hydrolysis are determined by orthogonal design and analysis of variance.
