Abstract
[Objective] This paper seeks to study hydrolysis process for soybeen protein isolate with Alcalase and the nature of the hydrolyzate was studied. [Method] The effects of the main parameters including pH,hydrolysis temperature,enzyme concentration,substrate concentration were investigated. The optimum conditions had been found by single-factor and orthogonal tests. [Result] The optimum conditions were showed as following:pH was 8.0,hydrolysing temperature was 60 ℃,enzyme concentration of substrate was 1 000 u/g,substrate concentration was 3%,hydrolysis time was 2 h,degree of hydrolysis was 46.13%.[Conclusion]After enzymatic hydrolysis,the degree of SPI reached preparation of soybean peptides requirements.
