Abstract
To well utilize the cell filtered sediment of Mononscus,the enzymatic hydrolysis conditions for cell protein of Mononscus was studied.The optimum conditions were obtained as follows: neutral protease dosage 5.0×104U/g(cell amount),alkali protease dosage 7.0×104U/g(cell amount),enzymatic hydrolysis temperature 50℃,pH value 7.5,substrate concentration 40g/L and enzymatic hydrolysis time 18h.Under above optimal conditions,the degree of composite enzymatic hydrolysis was 10.60%,which was significantly higher than that of single enzymatic hydrolysis.
