Abstract

As a new type of nature antioxdants,apple polyphenol is an important activity substance contained in apple.It is very rich in unripe apple and apple pomace.In this paper,the composition and property,the biochemical and biological function,the preparation method,analysis of apple polyphenol were summarized.The application of apple polyphenol in medicine,function food and cosmetic were discussed.
