Abstract
Enzymatic treatment to improve the extraction of collagen from chicken bone powder was explored in this paper.The raw materials was decalcified by 1.0mol/L HCl for 2 days,defatted by hexane and then hydrolyzed by pepsin under the following optimal conditions:enzyme dosage of 150U/g,reaction time of 120min,pH value of 1.7,and reaction temperature of 37℃.For the extraction of collagen from the enzymatic hydrolyzate,the best liquid/solid ratio and extraction time were 6:1 and 5h respectively.Under these conditions,the extraction rate and protein content of the collagen from poultry bone were of 18.4% and 54%,respectively.
