Abstract
The enzymatic extraction of collagen protein from pig skin was studied.After the pig skin was treated with Bacillus subtilis neutral proteinase,collagen protein was extracted by water.According to the single factors and orthogonal experiment the optimal extraction conditions were confirmed as that: pH6.0, E/S 400U/g,temperature 35℃,time 2h for enzymatic processing;For water extraction,the extraction time 4h,the ratio of liquid and solid 6∶1.The comparison experiment was done and it showed that after the enzymatic treatment the yield ratio was significantly improved.
