Abstract
Enzymatic extraction of collagen from chicken bone by pepsin is researched in this paper.The raw material is degreased by ether,then purified by 0.5 mol/L hydrochloric acid solution for 24 h.Acetic acid solution is utilized as enzymatic solvent for the extraction of collagen.The optimal enzymatic extraction conditions are as following: temperature 45 ℃,acetic acid concentration 0.7 mol/L and enzymatic time 36 h.Under the above conditions,the content of collagen and calcium up to 63.98% and 39.07 mg/g,respectively,are obtained.
