Abstract
Objective:Screen the optimum preparation for collagen by enzyme hydrolysis.Method: Enzy-matic condition was optimized by single-factor experiments and the orthogonal design with collagen yield as the in-dex.Result: The optimum extraction condition was obtained as follows:the ratio of enzyme /substrate was 3%,pH 2.0,material-liquid ratio 1∶ 28,enzymatic hydrolyzed for 48 h at 0 ℃.Conclusion:Preparation for pigskin collagen by pepsin is better.
