Abstract
The nutritional value of brown rice was summarized.The major types and nutritional characteristics of food made by brown rice were introduced.Production processes of main brown rice food including germinated brown rice food,baked food and ready food made by brown rice were analyzed,and technical essentials of various types of brown rice foods in production were expounded emphatically.
