Abstract
On the basis of presentation of functions of brown rice, this article makes contrast in the nutritional value and edible quality between refined rice and brown rice. The author examines the present state of brown rice processing and utilization and makes analysis on its developing trend in a bid to provide reference for its comprehensive utilization and exploitation.
