Abstract
The flavonoids that extracted from celery leaves and stems were respectively tested through the experiment.It was extracted by ethanol solvent and the percent was tested by spectrophotometer.The conditions of the extraction temperature,returning time,materials proportion and ethanol concentration were screened and the optimum conditions of extracting flavonoids from celery were determined by orthogonal test.The celery leaves were:the temperature 85℃,returning time 3h,materials proportion 1:20,ethanol concentration 85%.And the celery stems were:the temperature 75℃,returning time 3h,materials proportion 1:12,ethanol concentration 90%.
