Abstract

It mainly studies on extraction temperature,extraction time and ultrasonic frequency.Experimental results indicates that the optimum ultrasonic extraction conditions are extraction temperature 55℃,extraction time of 55 min and ultrasonic frequency of 60 KHz.The active ingredient in the pepper extraction rate is 4.29%.
