Abstract
A new fairly selective and simple UV spectrophotometric method for the determination of nitrite is developed. Nitrite reacts with safranin O in acdic medium (HCl) to forma product, which is measured at 350um. Beer's law is obeyed over the concentration range of0-2. 4μg/ml NO. Satisfactory results have been achieved when applying the method to thedetermination of nitrite in pork products, which are in agreement with the results of the N(1-naphthyl) ethylenediamine dihydrochloride photometric method.
