Abstract

A new UV spectrophotometric method for the determination of trace nitrite was studied. This is based on the nitrosation reaction of iminodiacetic acid with nitrite in hydrochloric acid medium and in the presence of KBr. The product was measured at 350 nm, Beer's law is obeyed over the concentration range of 0~25 μg/25 mL NO - 2. The apparent molar absorptivity is 4.5×10 4 L/mol·cm. It has been used for the determination of trace nitrite in pork products with satisfactory results.
