Abstract

The nitrite content of green vegetables processed is different with the different time. To make a test on celery,a new fairly selective and simple UV spectrophotometic method for the determination of nitrite is developed. Nitrite reacts with neutral red in acidic medium (HCL) to form a product with maximum absorbance at 360 nm. The analytical results of nitrite in celery products are in agreement with the results obtained by the N-(1-naphthy1) ethyeenediamine dihydrochloride photometric method.
