Abstract

To improve comprehensive utilization of peanut,extraction optimization of red pigment from peanut skin with lixiviating method were studied.The result shows that the best extraction rate is at conditions of 60% volume fraction of alcohol,60℃,1 ∶15 solid-liquid ratio with pH 6 for 3 h extraction.
