Abstract
Used as raw material,black peanut skin was extracted with acid water and extraction technology was studied. The effect of different factors on extraction of pigment with single and multiple factor tests were investigated,the optimum conditions were the acid degree was pH 1,the weight of mixture was 50 times as large as that of the black peanut skin and the pigment was extracted two times at 80 ℃,each step for 2 h, extraction progression was 2.
