Origin and Evolution of the Modern System of Food Safety Management: HACCP and Prerequisite Programmes

Abstract

This chapter summarises the principal events in the origin and evolution of modern food safety practices so that readers can better understand how to improve practices and to provide even greater food safety assurance in the future. The adoption of hazard analysis and critical control points (HACCP) beyond the United state (US) food industry received a major impetus by the 1985 publication of a National Research Council report, 'An evaluation of the role of microbiological criteria for foods and food ingredients (NRC1985)'. To be successful, HACCP must be supported by a number of prerequisite programmes (PRPs). A major reason for the more rapid implementation of HACCP in developing countries is the quickly increasing globalisation of food trade. Global trading partners benefit by the uniform application of the most effective food safety procedures.
