Abstract
[Objective]Study on the determination of benzoic acid and sorbic acid in meat products by high performance liquid chromatography [Method]A CAPCELL PAK C18(250mm × 4.6mm,5μm)column was used.A:methanol,B:0.02mol / L ammonium acetate(0.002% formic acid),A∶B=90∶10 as the mobile phase;flow rate was 1.0mL/min;the detection wavelength was 230nm;column temperature was set at 30℃.[Result]The calibration curves established showed good linearity over the concentration ranges of 0.1~60μg/mL(R~2=1.000),and the average recovery rate was 95.7% and 92.8%,respectively.The method had good repeatability,stability and precision.[Conclusion]The method was accurate and suitable for the detection of benzoic acid and sorbic acid in meat products.
