Abstract
The optimal hydrolysis conditions of the Decapterus maruadsi by neutral protease and papain were obtained. The hydrolysis effects of neutral protease and papain singly and double were compared. The conditions of two enzymes were studied by the orthogonal experiment. The results indicated that the effect of hydrolysis was the best by adding papain and neutral protease simultaneously. Under the optimal conditions,the content of amino acid nitrogen was 2.48 g/L in hydrolysis solution,the recovery rate of nitrogen was 91.27 %.
