Abstract

The conditions of enzymatic hydrolysis of Decapterus maruadsi protein by papain,neutral proteinase,alkali proteinase and composite enzyme were studied,and neutral proteinase was the suitable proteinase.The optimal conditions were hydrolysis temperature 55℃,enzyme concentration 1300IU/g raw material,enzymatic hydrolysis time 6h,substrates concentration 1∶2(muscle∶water).Under the conditions,the rate of enzymatic hydrolysis was 47%.
