Abstract

This article studied the hydrolysis of silkworm pupa protein by alkaline protease on the basis of comparative tests in the five kinds of enzymes.On the basis of single factor experiment,taking the degree of hydrolysis as the index,it studied the effects of temperature,substrate concentration,time,amount of enzyme and pH on the hydrolysis effect of silkworm pupa protein.It also optimized the hydrolysis conditions through the orthogonal test.The results showed that the optimum conditions of alkaline protease hydrolysis of silkworm pupa protein were as following: the temperature was 55 ℃,the substrate concentration was 3%,the time was 6 hours,the amount of enzyme was 3%,the pH was 9.5 and the degree of hydrolysis of silkworm pupa protein could reached 22.91%.
