Abstract
In this paper,quantitative descriptive analysis(QDA)method was adopted to evaluate sensory quality and establish spider web-shaped graphs by QDA data of three ham sausages.The results showed that this method could distinguish the sensory characteristics of three ham sausages,and it was suitable for evaluating the sensory quality of ham sausage.
