Abstract
The quantitative descriptive analysis(QDA)method was used to assess the qualitative and quantitative quality of the wines,which were made from ordinary grapes or frozen grapes.The principle and application of QDA method were also studied.After QDA analysis,the results showed that the sensory characteristics of frozen wine,including color,lasting,aromatic,transparency and aroma,were better than those of the ordinary wine.
