Abstract

Resistant starch is floor board of non-assimilation starch and its hydrolysate by normal human small intestine.The research advance on structure,preparation and property of resistant starch was introduced in the paper,so as to push forward internal starch research and to accelerate exploitation and utilization of farm produce resource.
