Abstract
Resistant starch is a new resource of dietary fiber,having the good food processing characteristics and health care function.The paper summarizes the classification,preparation,measuring methods,physicochemical properties,the study of sturcture and application prospect,so as to the study of resistant starch can provide some of the theoretical and processing basis on the future.
