Abstract
Polyphenol substances in grape residue have high economic value.In this paper,through single-factor test and orthogonal test,the best extraction conditions of polyphenol substances from grape residue were determined as follows: ethanol concentration 50%,extraction temperature 60 ℃,ratio of material to solution l︰12,extraction time 50 min,the extraction rate of polyphenol substanees from grape residue can reach 13.482 mg/g under above conditions.
