Abstract
The protein was extracted from defatted pine nut by water,and the effects of extraction time,temperature,ratio of material mass to liquid volume on extraction rate were studied by response surface methodology.The results indicated that the optimal conditions were as follows:temperature 36.9℃,solid-liquid ratio 1∶32.3 and time 98.2 min.Under the optimal conditions,the predicted extraction rate was 83.2%,whereas the experimental value was 83.6%,and the error was 0.5%.The conditions obtained by response surface methodology were believable.
