Abstract
The optimum extracting conditions of protein in pine nut seed were studied in this paper. The influences of the ratio of pine nut to solution(W/V),pH,the concentration of NaCl solution,temperature and time on the extraction rate were investigated. On the basis of single factor test and the orthogonal test,the results showed that the optimal conditions of extraction were:pH 8,extraction temperature 37℃,ration of raw material to water 1∶30,the concentration NaCl solution 0.12mol/L,extraction time 120min. Under these optimized conditions,the yield of salt soluble protein of pine nut was 87.235 %(W/W).
