Abstract
Water-soluble protein was extracted form Ganoderma lucidum.The effects of extraction time,extraction temperature,pH,solvent-material ratio and their effects on the yield of water-soluble protein were studied.Based on the results of single factor test,the yield response was analyzed using method of response surface analysis.The optimal condition was as follows:extraction temperature 26.56 ℃,extraction time 8.87h,pH 8.89 and solvent-material ratio 34.42mL/g.Under this condition,the predicted extraction yield of water-soluble protein was 82.59 mg/g,which was close to the experimental value of 81.35 mg/g in the validated test.
