Abstract

[Objective] The aim was to supply base data for exploitation of polyphenols from apple residue.[Method] With apple residue as material, its polyphenols were extracted by using organic solvents(methanol, ethanol and acetone). With galic acid as standard substance, the content of polyphenols in apple residue was determined by using Folin's methods. And the effects of organic solvent concn.,material-liquid ratio, extraction time and extraction temperature on extracted polyphenols amount were studied through orthogonal test.[Result] The ethanol was confirmed as optimum extraction solvent in experiment. The effects of various factors on extracted polyphenols amount were extraction time extraction temperature ethanol concn.=material-liquid ratio. The optimum technological condition for extraction of polyphenols from apple residue with ethanol solution was ethanol concn.of 70%,extraction temperature of 20 ℃,extraction time of 1 h and materil-liquid ratio of 1∶14.[Conclusion] In this study, the optimum extraction technology of polyphenols from apple residue was confirmed.
