Abstract
The extraction of polyphenols in the walnut leaves were studied using walnut leaves as experimental material by ethanol refluxing method. The research presents the effect of the ratio of material to liquid, ethanol concentration, temperature, extraction time on the extraction process of polyphenols, using the orthogonal test of these four factors. The optimum process of polyphenols of pomegranate peel extracted by ethanol were: ethanol concentration 60%, extraction temperature 95℃, extraction time 40min, ratio of solid to liquid 1:20.
