Abstract

The purpose of this paper was to investigate extraction technology of gardenia yellow pigment by means of microwave, with orthogonal experiments, an optimal technological condition was selected in this study: ethanol concentration 50%, microwave power 400W, extraction time 90s, weight ratio between the gardenia and the ethanol solution 1∶10 and the number of extraction 1. With optimal processing condition, the extraction rate of the pigment can be as high as 94.14%.
