Abstract
The red pigment was extracted with ethanol from peanut skin by microwave-assisted extraction method.Through single factor and orthogonal experiments,the effects on the extraction efficiency and gardenia of red pigment of microwave power,microwave extraction time,ratio of material to solvent and volume fraction of ethanol were investigated.The optimum conditions were obtained as follows:extraction power level 40,extraction time 60 seconds,50% ethanol,ratio of material to solvent 1∶25.Under the optimum parameters,the extraction rate reached up to 14.038%,and the gardenia was 24.294.
