Abstract
Single-factor experimental method was adopted to investigate the effect of the granularity of raw materials, microwave power, pH value, temperature of extraction solution, and extracting time on the extraction of yellow gardenia pigment by microwave irradiation. By the optimum technology, the extraction yield was over 94% at once-extracting and over 99% at twice-extracting. This technology was better than other traditional method.
