Abstract
Total flavonoids were extracted with Soxhlet reflux method at the maximum absorbance wavelength of 510 nm from persimmon leaves, then were measured after detected by UV spectra. The extracting process was optimized by orthogonal test. The scavenging effect of total flavonoids extracts on superoxide anion radical O2-· was also studied. The optimum process parameters were as follows: 200 mL ethanol of 60%,reflux time of 1 h and pH value adjusted to 9 with alkali.Persimmon flavonoids could scavenge free radicals to some extent, and there was a dose-effect relationship between the additions of flavonoids with its antioxidant activity.
