Abstract

This paper is about research of hydrolysis of whey protein concentrate(WPC)with magnetic polymer immobilized trypsin.We got conclusion that the optimum conditions were substrate concentration 80 g/L,E/S 1400 U/g(substrate),pH 7.0,at 50 ℃ for 4 h.We also stud-ied scavenging activity of different DH of WPC-hydrolysate on DPPH.
