Abstract
Using bullhead skin as a raw material,the effects of hydrolysis conditions of peptide hydrolase on peptide yield from bullhead skin were investigated including hydrolysis time,enzyme concentration,hydrolysis temperature and pH.The hydrolysis conditions were optimized by orthogonal experiment as follows: enzyme concentration 0.5%,pH 8.0,hydrolysis temperature 55℃ and hydrolysis time 3.5h.Under above conditions,the peptide yield was 18.84mg/mL,and the peptides with the molecular weight ranged from 180 Da to 5000 Da made up 94.89% of the total peptides.
