Abstract
A Monascus strain M02 with high productive Monascus pigment is isolated from marketing red-yeast-rice.According to single factor experiment and orthogonal experiment,the optimum composition of fermentation medium is showed as follows:rice flour of 5%,NaNO 3 of 0.3%,KH2 PO4 of 0.105%,K2 HPO4 of 0.045% and MgSO4 of 0.2%.Under these conditions,the total pigment value reaches 72.8 U/mL when initial pH is 5.0,fermentation temperature is 30 ℃,rotate speed is 180r/min and incubated for 5days.
