Abstract
In this paper, the fermentation condition of monascus pigment by solid-state fermentation of Monascus was studied. An optimum medium was obtained through single factor experiments and orthogonal experiment. That is, the initial water content 50%, 3% glucose, 0.1% glycerol, 3%yeast powder, 0.1% NH4NO4, 0.2% NH4Cl, 2% peptone, 0.4% MgSO4, 0.3% KH2PO4. Under this condition, the color scale of monascus pigment can reach 1302 U/g.
