Abstract
The extraction of polysaccharide with water from lotus leaf were studied. By single factor gradient tests and orthogonal designs, the optimum conditions of different factors for extracting polysaccharide from lotus leaf were obtained. The results showed that extracting temperature 75 ℃, extracting time 1.5 h, the ratio of solid to liquid 1:35, extracting 1 time is the best.
