Study on antioxidant activities of pigment in cherry tomato

Abstract

In order to evaluate the antioxidant activities of pigment in cherry tomato,reaction systems of hydroxyl free radicals,super oxide anion free radicals,DPPH free radicals and reducing force as well as removing hydrogen peroxide were established.Then the antioxidant activities of pigment in cherry tomato and VC were measured and compared in different reaction systems.The results indicated that pigment in cherry tomato could effectively scavenge hydroxyl free radicals,super oxide anion free radicals,and DPPH free radicals.The sample concentrations scavenging 50% of free radicals respectively were 2.280,16.40,27.54μg/mL,which were lower than pure lycopene.Compared with VC,it had a better effect on the elimination of these free radicals.Pigment in cherry tomato had stronger reducing force than VC.In addition,pigment in cherry tomato was capable to remove hydrogen peroxide,but its scavenging effect was lower than VC.To sum up,pigment in cherry tomato had good antioxidant activities,which could be used to develop products scavenging free radicals.
